it is quite possible that there is a minute leak in your heater core. does the windshield have a light film on it? the film wont defog, esp without a/c to dry to the air. One way to check this is to bypass youre heater core and run the two hoses together with like a piece of pipe or pvc.

you may have a leaking heater core or clogged evap that. now you will have water/coolant sitting in the bottom of your evaporator box, when you are coming to a stop or taking off, you may be hearing water sloshing around. are you low on coolant or can you smell funk in your a/c ducts?

have you checked the codes since the issue has started... it may have new codes that will help you diag the issue. and +1 on the coolant temp sensor.
