When I was still using a laptop I bought a cheap padded laptop case off amazon for it and cut a slot for the usb cable in the side. I then tied the case down with parachord. Gave the laptop enough padding (though I had an SSD to give me the best chance of the laptop not being killed from vibration). So I'd set up the laptop, slide it into the case, and tie it down.

I now use a Raspberry Pi unit that's self-contained, powered from the car. May be offering it for sale to others in the near future. Auto logs whenever the car's running. PM me if interested.

Haven't done it myself yet, but I've been toying with a police interceptor style mount that goes in the glove box opening. Have to weld some mounts up inside then have a tray that attaches to them via HD clips or slide locks, then the laptop would attach to it with friction clamps.

Although the rasp/pi setup sounds dope!
