I have a 93 tsi AWD 5 speed. Stock save for a K&N filter and 3" cat back.

I'm wanting a good running, enjoyable, driver. Not a daily driver, but not a 1000hp race car. I'm not gutting the interior or caging it. Also, building the motor (other then ARP studs / MLS gasket), isn't an option at this point. Also, pump gas only..

What would YOU advise me to do? What turbo, injectors, clutch, etc.

I don't know how to do that. I'm not very computer literate. I can't even resize pictures, LOL.
Here is something I put together to help people with that:

I'd go small 16g
750cc injectors
ACT Streetlite Flywheel
2100 + 6 puck (wears faster than FFD though)
Solid Shift bushings/bearings
Shockproof Heavy in Diff and T-case
MT-85 in trans
AFPR (Fuel Lab or Aeromotive are popular)
MBC
Good FMIC
ECMLink
Hawk HPS Front pads and whatever rears you like
Brembo OEM Blanks (Dirt Cheap dont worry)
2G MAF Setup
FP Manifold
450LPH Pump Rewired
NGK BPR7ES and NGK Plug Wires
3in turbo back
The best tune you can get

Get up to around 23 pounds and make a Cold air intake and an air box. You will be able to make 300whp no problem no knock. The key is to keep the air as cool as possible going into the engine. So be smart about routing your IC Piping and plan it out to avoid hot spots as much as you can. Keep hot with hot, and Cool with cool. This helps maximize efficiency.

I never have any cooling issues on my 90 gsx, 20+ psi evo small 16g with only 1 stock fan right now, Does everyone else have problems with cooling? I decided to go with a better oil cooler first, just because I don't have a temp gauge for oil.

I don't either, my car runs fine for coolant temps. Its the intake air temps that are critical to keep cool.
