GreenBelt,
just got my logger the other day, and noticed it can monitor air flow, temp and volume. with no mass air will the vpc convert the map signal and temp readings into readings for those functions?

Well the map sensor in on the Intake manifold so that is fine. I'm not sure the ECU will be able to tell the airflow because you not using the stock MAS.

If you have a logger, then yes, you can log the signal that the VPC is sending to the ECU. However, it will be the modified signal that the VPC is generating to mimic the function of the stock hardware, so any changes you make will show up in the logging process.
