I would like to know what is THE stiffest spring rate you can buy? I mean the absolute stiffest?

2.5" ID Hyperco springs can be had up to 1000# in 8" free length.

2.5" x 8" Eibachs can be found as high as 1200#.

While I was still in the race trim, springs went as high as 800/650 on my car. That was the same setup I used for a whole year as well. Not that I would recommend such a thing but, car was behaving just nice regardless of whether there was 6” of snow or a dry road underneath the car. But that was mainly due to the choice of shocks that where on the car. Valving of those and their capabilities are what actually puts a limit to how stiff you want to go. Well, your kidneys too! :)
