how streetable is a spider center diff (for daily driving, pros/cons) and what exactly does it do?

Do you mean a 4 spider center diff? The AWD cars can get an upgraded center diff that adds two more spider gears for extra strength. It works just like the stock center diff.

i have heard that with the spider gears you can not dyno the car.

A 4 spider center diff works just like the stock center diff, which has 2 spider gears, except the 4 spider center diff is stronger.
