I've searched but couldn't find anything, but just a quick informational question...

Is there a difference other than AT/MT with the rear differentials between a Talon and Eclipse?
AND what would be the repercussions with going from an LSD to non-LSD?

Internally I'm not sure, but externally the housings mount differently. Non LSD...less traction I guess. Depends on how much power you're putting down and what you do with your car.

Still pretty much stock right now, just need a quick replacement.

Speaking on 1Gs...

To my knowledge there is no difference in rear diffs between the MT Talons, Lasers and Eclipses. (besides 3 bolt vs 4 bolt of course)

Going from LSD to non-LSD:
gas mileage may get a wee bit better
rear traction will diminish (the wheel with the worst traction will try to spin)
lose almost all ability to throttle-steer
you MAY see less understeer mid-corner (Archer Racing experiemented with open rear diffs on the track for a while for this reason)

As always, YMMV
