A spike occurs when there is lag between the time your turbo makes the desired boost and the time the wastegate is opened to maintain it. The lag allows the turbo to spool more air than is intended, but only until the wastegate opens fully.

For instance; When I first installed my TurboXS MBC I hooked the lines up incorrectly, I had a fat hose from the boost source to the controller and a skinny stock hose from the controller to the wasegate. The skinny hose was slowing the air enough so that it took an extra second for the wastegate to open, causing a momentary "spike" in boost.
