Ok i've searched and came up with pretty much nothing. But my question is if I were to get 18 x 8.5 inch wheels with a 45mm offset what size tire could I get by with without rubbing?

225's probably won't rub but are kind of narrow for that wheel. 235's are good width but will probably rub. If you have some kind of deal going on these specific wheels, I'd say go with 235's but leave enough in your budget for spacers, you will likely need them.
