Stock injectors with boost set at 12 PSI. Do you think I can turn it up to 14?

Also I can't get the graph viewer to graph the O2 voltage, I can only view it in the spreadsheet

God yes!! YOu are running pretty rich plus you have a 255 pump in the car. You could prolly bump it up to 15-16psi with very little problems.

Doesn't the fact that my timing stays at 19 degrees from 6k-7k indicate that I am getting 3-5 counts of knock so it stopped increasing timing?

No. 19-20 degrees of timing is pretty good. That's usually what you want to shoot for.
