does it sound like the gears are grinding? does the car still pull hard while the noise is happening, or does it seem to not move much?
drain the fluid (hopefully theres fluid in there) and check for shavings/chunks. refill with mopar. BTW: you can epoxy a small magnet to the end of the drain plug to catch metal, makes for an easy inspection.
did you look at the side gears in the new diff before you gave it to the mechanic? Or could one have fallen during the pull/ship/install? i'd pull your axles and give the differential a quick look. inspect the splines on the axle shafts while they're out.
steering wheel shaking could be ALOT of things (bad tie ends, bearings, cv joints, out of balance tire, etc...) Its best to take things apart and start checking them.
